A team comprising potato grower MB Organics, processor Greenvale AP and Sainsbury’s mapped the supply of organic potatoes. They found that some 30 per cent of potatoes harvested did not end up on the shelves of the supermarket. One in three potatoes went to processing for other products or to animal feed. This meant that profitability in the chain was not as good as it could be.
